school district fish fry

My school district put on a district wide family fish fry--a) I love some catfish b) I wanted to go to meet some of the people I work with's...families c) this was especially important because most of them live in the community they work in, where I don't...but going to "family" stuff like this just me and R is HARD.  But I signed up to go...so we went, and I was glad we did! 


Hopefully it is something that Ryder looks forward to going to each year!

freckle face farm pig roast [2015]

This was the third annual Pig Roast at Freckle Face Farm.  I had to miss the second one, but have been there for the last two.  It is always a good time...and some yummy food of course!  








A storm rolled in and we had to hurry and clean things up and wait it out...

I don't think I saw Ryder but 2 times the whole time we were there because he was off playing with all "the friends"...Dawson puts this on every Spring, but we also somewhat celebrated the graduation of his younger brother Cooper who will be headed off to college...SOON!  So proud of him!

food trucks at corner 2 corner

A few weeks ago our little town had an event on a Friday night with lots of food trucks from neighboring cities.  It literally rained that entire week, but we were going to let that stop us from food-truckin' it up!

I invited Allie and Josh to go with us and luckily Allie was off work, and we were all able to go!  We did our research on all the food trucks prior to going, to narrow down on choices, and I'm so glad we did....because it was a bit overwhelming once we got there.
On my way home from work I saw this guy downtown...(you can see in this pic how nasty it was out that day!)
Come to find out...one of the food trucks, BEAST, carries my aunt and uncle's meats from their farm!  So I had to make sure I stopped by there.  I was going to get some tacos, but they were out of chicken, so I quickly changed my mind.

The was obviously the happening place of the evening.  I had never personally had Chicken and Waffles...but I wasn't against trying them!  I also knew that this was the only truck R would eat anything out of.  
We waited in line a good while, just to order...while Allie enjoyed her tacos!

It was going to be a 35-40 minute wait on our order, so we decided to walk around and hit up some local shops.
Kinda wished I would have tried one of these dogs...but I will next time!
We stepped in White Goat.  I placed Ryder in that chair with a plate full of cookies and a canned Sprite while I looked around.  

Our food was finally ready, and I guess somebody thought it was just too funny that we were eating waffles out of a pizza box! 

I got the baby which was just half a waffle and two chicken strips...and it was JUST enough.  I also held the hot sauce.  It could have used more syrup...but that didn't keep me from leaving a clean plate!
There was a new store open that I wanted to visit while we were there...it had a lot of random stuff, from toy police cars for kids, to chicken coops, to dog houses, to headboards.  All at decent prices too!  Allie and Josh actually left with two things so it was worth our visit!
A night out wouldn't be complete without a stop at Blue Sail.  It was a packed house, that's for sure!  We ended up staying there until 10...I was completely surprised R lasted that long.  But he was GREAT for the most part!

When I saw him like this, not making a peep...I knew it was time to go!

We had a fantastic night out enjoying our little downtown with some of our favorite people...and we can't wait to do it again!

my first go at homemade cupcakes...

One day at the grocery store, I saw the long line of extracts!  I knew those were game changers...and that was how everyone made such yummy tasting cupcakes!  I grabbed a few that sounded good!
The winter weather rolled in and I knew it was time to have my first go at making homemade cupcakes.  I decided to go with the raspberry first, and I happened to have fresh raspberries in the fridge.  

I was just happy to see them curving on the top!

 Luckily I had some food coloring on hand as well which made them even more fun!  They were a bit dry first go around...so I had to make some more!
...This time I went with purple, which was a little more "raspberry" fitting.  That butter-cream y'all is a game.changer.  I will never buy frosting from the store again!!  I used a lil more milk in this batch, and added some melted coconut oil.  It helped, but I still don't thing I've perfected them!  

I'm gonna keep working on it and see where I get.  Until then, my coworkers will be testing out a lot of cupcakes! ;)

Anybody have a recipe they want to share where the cupcake is just as moist as the butter-cream!?  ;)

tacos 4 life {T4L}

I already talked a little bit about Tacos 4 Life HERE, but since then I've been back since then...I wanted to share a little bit more about it and add some pics!
One of my favorite things is that in this eating area, all of the chairs are different!  Some metal, some wood, come cushioned, some patio chairs--you name it!  So much fun!

They've been open since Monday...and I've been three times and I have NO SHAME!  I've gotten something different each time I've gone and I seriously and dying to get back there ASAP because there are so many other things I want to try!

One day Allie and I got there RIGHT when it opened and there was already a line of people standing outside the door waiting for them to open.  That is the only reason all these seats are open!  Not 20 minutes later, the line was wrapped around the inside of the restaurant.  
There are so many different features and walls that I wanted to take pictures of every time, but there was always so many people I just couldn't...but I finally got this one!  The pink is threat thats been put around nails!  I love this!


They even have a fun photo-booth with props that you can use and hashtag your pics on Twitter or IG for a chance to win free Tacos, but again it's been so crazy in there, I haven't had a chance to get back there yet!

I introduced my parents to the goodness and they were THOROUGHLY impressed!--and I honestly haven't heard one person say that anything bad about the food!  There are so many different unique sauces that just grab your tastebuds in such a unique way--it's what keeps me coming back for sure! 
I went with a quesadilla the last time I went.  LOVED it and great alternative if you don't want a taco!  They use their cheese dip inside the dilla and that's really what I enjoyed most about it!  Such a unique cheese dip taste for sure!  
The owners have a heart of gold and you can see that in all of the hard work and time that they've put into making a difference, even if it's just a small one, in a little bitty AR town!


This is a mango habanera taco and fish taco (my current fave) with black beans as a side.  

Just look at all that yummy goodness!


Again...T4L is a meal 4 meal program.  I think when I went with my parents we "donated" 7 meals just by eating there!  If you're going to go out to eat and spend $$ why not spend it, eat yummy food, and also feed the starving children.  A great and simple way to give back!



I am thankful this idea is right here in my in my hometown, and I want anyone and everyone coming through to try it out!  It will NOT disappoint--and if it does, I'll buy your meal! ;)

Half Way Haul!

Happy Wednesday friends!  It barely feels like Wednesday because of our break on Monday!  What a cold and rainy day it is around here!  I didn't need a jacket when I left this morning, but I did by the time I got home!  I'm just ready for it to be pretty out again!!

Just a few randoms from me today...you know how that goes!  :P

I have been on the look out for a nice looking watch (white, black, silver &/or gold) that looked like it wasn't digital, but it was!  With subbing and school in general, it's just know to have a digital one!  I haven't been able to find one ANYWHERE...so I've just been sticking to my digital IronMan that makes me look semi-athletic.  Ha!  Well, while looking through SHAPE magazine the other day, I finally spotted the watch!!!  It was everything and more I had been wanting!  Well when I saw it was GUCCI and "Grammy Special Edition" I kind of got a little bit sad.  Sure enough.  Only $2,000.  :(  {Insert sad face here.}   

But isn't she beautiful?!  (For a digital watch!)  I'll just keep looking!

Another discovery I made while flipping through a magazine...I am not usually an expensive perfume type of girl...but this stuff smells TOO good!!
Some of Freckle Face Farm's little piglets!  They have around 25 piglets right now...I just wanna get my hands on one of those lil munchkins!
The BF took me to Pasta Grill on Saturday night to celebrate Valentine's & OMG this Italian Meatball Spaghetti...words do not describe.  This lasted me 3 meals!  YUMM!  {Had it again tonight for mom's birthday dinner too!  ;)}
My wild man sleeping with his Valentine's "Cupig"!  It sings the "Cupid Shuffle"...pig version of course!  He took it to school on Tuesday and everybody loved it!  Ha!  I just can't get enough of my sweet boy!
